Jodie the Roadie’s Go to Recipe

We all have those quick and easy but very tasty recipes that we hang on to.

One of my favourite “Go to Recipes” is an easy Vanilla Slice recipe that I got from my friend Anna at church. After tasting her Vanilla Slice at an afternoon tea I just had to have it and try it out for myself. It’s been a real hit in my house with my family too.

A few weeks ago I went to the shops to get the items I needed to make it and was surprised to find that the Arnott’s Lattice biscuits that I’d been using were now discontinued! I put this to the Life FM Facebook page to share my dilemma and the most popular suggestion was to use SAO biscuits.

So here’s the Easy Vanilla Slice recipe. Give it a go and I’d love to hear how it goes down in your family. Plus, let me know of  your “Go To Recipes”.

2 x packets Arnott’s Lattice biscuits or SAO biscuits

1 x Cottee’s Vanilla Pudding

1 x 600ml cream

 Combine cream with vanilla mix with a fork until it thickens.

Spoon onto biscuits and sandwich them and tidy cream from the outside.

Dust with icing sugar.

Keep refrigerated.
