Sam is a Community Foodie, and has a Diploma of Business and a Cert lll in Nutrition and Dietetic Aide. She is passionate about educating families to equip them with the knowledge and confidence to explore food together, to cook healthy, delicious meals and to enjoy time together in the kitchen and at the table. She has two crazy kids, a patient husband, a dog and a python and has been at Life FM for nearly six years.

Sam’s Rocking Risoni Pasta Salad


Today’s recipe was my Rockin’ Risoni Pasta Salad. You can serve this in a lettuce cup or a container for the lunchbox. To create, gather up…

A packet of Risoni pasta (I used about 1 1/2 cups)

2 avocados, chopped

1 cup of fresh cooked corn kernels or a small tin of corn Small tub of cherry tomatoes, halved Handful of torn coriander leaves to garnish Roast pumpkin pieces (I had some leftover from the night before, use whatever veggies you like) For the divine dressing…

1/4 cup whole egg mayonnaise

1/2 cup Greek yoghurt

3 Tbspns milk

1 Tbspn lime juice

2 Tbspns coriander

1 heaped teaspoon minced garlic

Dash of salt and black pepper to taste

Cook the Risoni according to the packet directions, then drain and rinse with cold water. Add the veggies and place the dressing ingredients in a processor or hand blender and blitz until smooth. Pour over the Risoni, gently toss and garnish with the coriander. You can add roast chicken, feta cheese, roast capsicum…whatever you desire. Enjoy!



Sam’s Milo Slice


Sam’s Inspired Milo Slice

Pre-heat your oven to 180c and gather up…
1/2 cup self raising flour
1/2 cup plain flour (you can substitute both with whole meal versions)
1 cup rolled oats
2/3 cup desiccated coconut
1/2 cup brown sugar
1/2 cup Milo
1 free-range egg, whisked
125g butter, melted
Throw all the dry ingredients into a processor and blitz until combined. Add the egg and butter and blitz until combined. Spoon into a lined slice, or small oven tray, bake for 18-20 mins. This was divine warm but also delicious cold for a lunchbox snack, plus so much healthier and cheaper than the store bought bars xo
