Baby Fruit Tarts
To create these little babies (we made 18 of them) pre-heat your oven to 180 degrees and gather up…
2 sheets of thawed puff pastry
Egg wash (1 egg beaten with a splash of water or milk )
1 small tub of cream cheese
Juice from one lemon plus zest
Couple of tspns vanilla extract
1/2 cup sugar
Thin slices of fruit. I used mulberries and figs (from my mamma’s trees), some plums and nectarines
Mix the cream cheese, lemon, sugar and vanilla together with a fork.
Using a large cookie cutter cut out 9 rounds per puff pastry sheet.
Using a smaller cutter or glass, gently make an indent so you have a small round outer edge.
Place on a lined baking tray.
Pierce the inner circle with a fork a few times then on that spread some cream mix and top with your thinky sliced fruit.
Brush the outer pastry circle with the egg wash, sprinkle a little sugar on top.
Bake for 12-15 mins or until puffy and golden.
With your leftover pastry you can make roll it out, spread some vegemite and cheese on it, cut into thin slices, twist and pop in oven for 10-12 mins for a snack ❤
